Ian Curley is a British-born and Australian-based chef, with an enduring 25-year tenure in Melbourne that has seen him at the helm of some of the city’s most iconic restaurants. Currently, Ian is co-owner and chef at French Saloon and Kirk’s Wine Bar.
Ian’s food is much-loved for its accessible approach and simple philosophy – he cooks the food he loves to eat, across all cuisines. His signature style, however, is European fare of the highest quality, with classic French underpinnings – a legacy from the rigorous training he received early in his career in the kitchens of London.
Ian and his menu from French Saloon will take centre stage in the Grand Ballroom Dining Series at Paris to Provence this year, including the Emperor Champagne Breakfast Series and a daily Petit Chablis 3-Course Lunch and Classic French 4-Course Dinner.
Milk the Cow’s Brand Ambassador Laura Lown has 13 years of experience in the cheese industry, and a depth of knowledge not seen often on our shores. Hailing from the UK originally, Laura studied her craft at Paxton & Whitfield, Britain’s leading cheesemonger for over 200 years, and one of the very few cheese shops with a Royal Warrant to serve the Queen.
Laura joined Milk the Cow as part of the opening team in 2012 and is responsible for cheese education, including masterclass events and training the fromagerie’s team of cheesemongers. She oversees the curation of the 6-metre cabinets that house 180 different varieties of cheese from all over the globe.
Laura will be presenting in the Milk the Cow Masterclass Pavilion all festival long at Paris to Provence, showcasing the incredible fromage of France alongside an ever-changing lineup of experts and their artisan boutique beverages.
After reading a series of books on Champagne, Kyla fell in love with the enigmatic story of the region and its characters: a place where Kings have been anointed for centuries,a place where Napoleon Bonaparte used to take his men before any fight to invigorate them - giving birth to his friendship with Jean Remy Moët.
She thus decided to follow her heart and travelled to France to learn everything there was to know about champagne. Now known as The Champagne Dame, Kyla has carved a big small business out of a niche industry and is considered one of the top educators in Champagne, travelling the world as a speaker and regularly hosting masterclasses, corporate events and private tastings.
Kyla has recently launched her second business, Emperor Champagne, an online e-commerce destination that offers an expertly curated collection of champagne as well as dedicated champagne knowledge and service.
